What is S O U R D O U G H ?
Sourdough is a healthy artisanal bread. It involves a long fermentation process, which gives it its characteristic tangy flavour and chewy texture.
W h at i s s p e c i a l a b o u t t h e s o u r d o u g h p r o c e s s ?
- It is a 2 day process.
- No commercial yeast is added. Instead naturally occurring yeast and Lactobacilli bacteria found on wheat are cultivated in a starter of sifted flour and water over a long period of time.
- Once the culture, also called a sourdough starter, is ready, this starter is then added to more flour, water, and salt and a dough is prepared to make the classic sourdough.
- The pH of wet dough drops from 6.5 to 4.3 during this long fermentation process thus giving it its perfect tangy flavor and chewy texture.
- The sourdough is baked at 450° Fahrenheit to bring the bread to its specific characteristics and crust.
- In dry and hot weather, mostly akin to India, the shelf life of a sourdough can range up to 2 weeks depending upon the humidity without any preservatives and additives!

The secret of good sourdough is its long fermentation process. At 450° House of Sourdough, we do not believe in shortcuts. Our bread is fermented for two days and has absolutely no added sugar or oil. We donât use vinegar for tangy flavor and purchase high quality sifted unbleached wheat flour to maintain protein content.

We strictly refrain from adding any emulsifiers, additives, and preservatives for longer shelf life. Our bread is made to order and is delivered fresh.
